What is Food Upcycling?

Food upcycling transforms side streams and by-products from the food industry into safe, scalable, and nutritious new food ingredients or products.
It’s about:

  • Unlocking untapped edible potential
  • Ensuring compliance (e.g., novel food regulations)
  • Driving circular innovation at scale

Food upcycling creates environmental, economic, and nutritional value and is a cornerstone of the circular food economy.

About the Food Upcycling Project

The Global Food Upcycling Map is part of the Food Upcycling Project, a Danish initiative that helps the food industry optimally valorise side streams from agri-food processing and create new business opportunities from those solutions.

The project is led by the Danish Technological Institute and funded by the Danish Industry Foundation, in partnership with:

  • DTU National Food Institute
  • Foodvalley
  • Food & Bio Cluster Denmark
  • Dagrofa
  • The Danish Food and Drink Federation
  • The Danish Agriculture & Food Council 

Together, these partners identify, assess, and develop new food applications from side streams supporting companies through innovation and regulation.
